A traditional method blend of eating and cooking apples from our walled garden, vinified and aged in oak barrels for 10 months.
Tasting note:
Nose: Elegant, rich and deep. Notes of almond, lemon rind, candied apple.
Palate: Crisp, bright and rich. Notes of green apple, toffee, vanilla, sea salt, honey and blackcurrant.
Finish: Bright, saline, complex acidity. Lime peel with ripe fruit, spices and herbs.
Food pairing: Perfect on its own but will pair with light chicken dishes, Truffle and scallops.
Alcohol: 8.3% vol

Clear golden blonde with a white cap that thins to a swirl and edgeing.
Nose is mellow apple, grass, herb, oaked notes.
Taste comprises much more dominant oak, straw, apple skins, orchard wood, tannins.
Medium bodied, light spritzy carbonation, semi drying close.
Tidy.

750ml wired cork bottle from Fine Cider Co. Opened with a loud pop. Sparkling, golden colour, foamy white head that dissipates away and aroma of oak, bready yeast, apple. Taste is tart, appley, woody, vanilla, oak, white wine, with some bright acidity. Medium bodied, spritzy carbonation, dry oaky acidic finish. Nicely drinkable.
