We took The Bees Made Honey in the Alison’s Skull, our biere de miel, and fermented it with our mixed culture of lactobacillus, and saison yeasts. Wildflower honey was added late in the boil to lend its aromatic qualities of flowers and citrus.

Bottle from the source: pours light brown with white head. Aroma is honey, bacterial funk, malts. Taste is a sort of weird honey thing accentuated by the lactobacillus weirdly. While I think this was well crafted in a sense, I do not think this was a very pleasing beer.

Draft at the source, 5 month old keg. Hazy golden color, white head with solid lacing. Huge dust and white pepper aromas, maybe skulls left in attic corners. Taste is funky, dusty bittersweet and peppery straw. The regular Bees is funky enouhh, but the brett has really worked its magic in this one. The honey is long gone. Delicious.

A really nice beer. All kinds of stuff going on here. Honey, light biretta and lots of pungent funky citrus and guava/pineapple. Pours hazy light gold with good head and lacing. Possibly the best beer I’ve had from these guys - truly spectacular. Light tangy finish and huge on palate. Tap at brewpub.
