2022 SUNLIGHT TRANSFORMED
A dry, co-ferment of Dabinett apples fermented on Cabernet Sauvignon skins from Sheldrake Point Vineyard. This is the third vintage of this cider.
Wild fermented. (Listing doesn't say it's a pet-nat, like previous years)
Tasting Notes: rosewater, anise, pepper, herbal notes of pine and juniper, very light effervescence.
Pairings: bread pudding, spiced roasted chicken, samosas and Tom Kha.

Sleepy bottle from the cellar. Originally acquired through their bottle club.
Pint glass at home. Orange rosé, lightly bubbly, nicely settled cake.
Creamsicle, deep red grape wine, ash, strong earthy funk.
Clay, lightly sweet strawberry-grape wine, bitter dirt, apple core, heavy bittersweet apple peel, floral finish. Juicy. Punchy funk. Much more delicate than expected.
Mid-low carb, hidden acid, low tart, a little heat down the gullet, dries out mid sip.
Different but still good.
