Yuzu is an Asian citrus fruit, known for its intense aromatic character. It is frequently used in Japanse cuisine, providing a tart and fragrant flavour, resembling that of the grapefruit, with overtones of mandarin orange. We were able to get our hands on some dried Yuzu peel, straight from a producer in the land of the rising sun. We used the peel to infuse a balanced 18-month-old Lambic and the result is perfect for the warm summer days: fruity, slightly sour and very refreshing.

Draught Small whitish rim over faintly veiled orange-golden beer. Rainwater, wood, young leaves, citruspeel and, yes, yuzu, imagine. Dry, lambic with outspoken dry-out effect, tannine-rich, old barrels, hints of old, dry sherry. Light body, strange wheat-lik slickness, low carbonation. In the end, quite good lambic, but as usual, the yuzu remains fairly discreet.
