Our birthday beers were a statement that Polly’s were coming back for their hype credentials in 2026, and Like the Skyline is our continuation of that statement into our general releases. A tropical orchard punch of a beer, we’ve hybridised techniques picked up from two of our birthday beers and combined them into this silky, pillowy DIPA. Idaho 7 and Mosaic are a tried and tested combination that we know works here at Polly’s, but why not introduce not only the classic T90 pellets, but their CGX versions to boot – dry-hopped at a slightly warmer temperature to release and encourage all those desirable hop characteristics we love so much. The resulting DIPA is already an in-house favourite amongst the team, our owner Sean noting it as a particular highlight of recent releases.

Panda at home, thanks to Kenneth, 07/06/2026.
Murky orange topped with a lasting frothy off white head.
Nose is bitter orange, grass, pine needle, grapefruit, citric tinged straw.
Taste comprises orange pith, grass, pineapple, mandarin, pine nip.
Medium bodied, fine carbonation, semi drying close punctured with light juicy come grassy hop bitterness.
Tidy DIPA.

Can. A mild to medium haze on this yellowish gold beer, small and short lived pale cream colour head. Smooth start to the palate, mildly dry, good fine minerally carbonation. Smooth if slightly thin pale malts, a light creamy sweetness. A bitterish savoury edge to the hops is immediately obvious but, there is also the ubiquitous soft pine and, thanks to the Idaho 7 liberal usage, that wonderful broad spectrum piney hop fruits. Modern Mosaic provides a light candy fruit sweetness. Touch of hop spice on the semi dry finish. Good all round dipa, lots going on.

Can. A really fruity one, tropical, with pineapple, mango, peach, papaya, grapefruit zest and some orange notes. Full-bodied, sweet but not cloying, lightly warming, and with a gentle bitterness. I'd prefer a bit more bitterness, besides that it's a delicious flavor bomb. 848416 260402
