Mosaic. It’s been with us since the very first beer we brewed here at Polly’s. It’s seen us through name changes, global pandemics, some dizzying highs, scary lows, and creamy middles.

What can we do then to honour one of the hops that have been with us since day dot and the usage of which in other beers inspired us to brew in the first place? A single hop beer is the very least we can do thank you – Talk of the Town is a straight up, no frills dedication to one of the cornerstones of our brewing journey. Featuring a steady but hearty dry hop charge of 11g/l, this is an expression of everything great about this Stateside slammer.

Expect to find a medley of guava, blueberries, tangerine and bubblegum taking the spotlight on this beer, before more nuanced herbal and earthy tones bring some balance to proceedings.
