Oak aged ale hopped with Krush & Dolcita
First up is Forrest, an oak aged farmhouse ale blended from four barrels. The bulk of this blend was a saison brewed exclusively with a new experimental hop from Idaho called “Pink,” bringing a full charge of citrus and stone fruit flavors to compliment our house mixed culture strain. Some of this beer was sent to age in neutral gin casks and when it came time to blend we were blown away by the flavor profile in these casks. Despite just 90 days in oak, there was an explosion of bright yellow citrus flavors complimented by some lovely herbal aromas. At packaging we then blended this beer with a small portion of two separate puncheons from our taproom pyramid stack, one brewed with Dolcita hops and the other with Krush. The result presents herbal aromas of eucalyptus, chamomile, and lemon balm followed by yellow grapefruit, yuzu, and kumquats on the palette. Blending saisons from oak are our favorite beers to make, and Forrest is a great example of why that is.

On tap at Fair Isle, pours a clear blonde with a medium white head. Nose is complex, with big oak, bright floral hops, wild yeast, and some rustic saison yeast. Flavour has a nice complex wild yeast expression, with rustic saison yeast, some graininess, and a fresh hop expression to accentuate. Cohesive and well-designed, with suitably assertive carbonation. Very good.

Pale, slight haze. Thin head. Light bretty aroma, little bit of malt sweetness on the nose as well. Oaky, light bugs. There’s bitterness, but not a lot of hop aromatics…which is good because krush and dolcita are two of my least favourite hops.
