Summertime in the South - the hum of honey bees fills the air while the fragrance of honeysuckle, blackberry, peach and plum envelop you in a velvety blanket.
This honey wine is our attempt to capture those moments. We started with South Mississippi wildflower honey, added some of the softest and purist water and a beautiful strain of yeast. We then aged the wine over a winter’s coolness, adding a touch of oak, and allowed the flavors to mellow. It rolls pleasantly across the tongue, melting into an aroma of Southern fruit.

Bottle at RBWG, thanks! Pours a clear yellowish gold with no head whatsoever. Aroma has musty earthy honey with a bit of sweetness coming through. Flavor also is full of musty, earthy honey with just a hint of sweetness.

RBWG14 Trip Rating #142. Bottle shared at the Grand Tasting. Pours clear golden with a thin white head. Aroma of tart fruits, honey, herbal notes. Taste is sweet honey with a bitter finish. Thin bodied, lightly sparkling. Kind of a mess.

Bottle shared late night RBWG. Pours pale yellow with a few bubbles. Very watery. Not very sweet. Not much honey. Faint spices. Medium bodied, flat. Somewhat dry to finish, minimal honey character. Poor mead.
