We fermented our tripel Gnosis in peach mead barrels from our friends at Millstone American Farmhouse Cidery with our house mixed culture of wild yeast and lactic acid bacteria for an ultra lush and layered bit of decadence.

Draft at the source. Poured a cloudy yellow orange color, with a fluffy white edge head. Nice peach aroma, some woody character. Flavor was tart peachs, sweet malts. Very good!

Not sure this is an improvement on the regular Gnosis. Cloudy orange pour. Tart, moreso than many peach beers. Peach kind of kills the rest of the tripel aroma though. More of a sour really, with some citrus. Not much floral or coriander here. Tap at brewpub.

Draft at the source. Cloudy orange yellow color, bright white edge head. Nice aroma of praches bathed in vanilla. Taste is smooth fruity white wine, tart peach, vanilla. Delicious.
