This beer was created from a blend of saison fermented and aged in oak and tank on second-use organic peaches and pluots, including thirteen varieties of stone fruit from Collins Family Orchards. After aging for over a year, the beers were combined and then dry hopped with two vintages of Columbus grown at Loza Farms in the Yakima Valley. This beer was refermented to condition in the bottle.

Conditioned with: Organic sugar.
Cellar: This beer will age very gracefully. Best by Summer 2030.

750mL bottle, pours a cloudy orange with a medium white head. Aroma has aggressive dry-hopping, with lots of floral hops, peach, and rustic saison yeast. Flavour is intensely hopped, with lots of juicy peaches, floral dry-hopping, and light acidity. Nice juicy peaches, a bit jagged hops. Not their best, but solid enough.

Hazy, pale. Medium head. The aroma is big hop, with mellow peach for sure...going to assume there's pluot. On the palate, the stone fruit is a lot brighter. Big peach, the pluot is throwing down a bit of acidity. The malt base is full and sweet. The hop is still fairly assertive on the palate, lends a touch of bitterness, and balances a bit more with the stone fruit.

750mL bottle. Pours a murky yellow-blonde with a white head. Rustic saison yeast and citrus on the nose. Flavour is rustic and citrus, nice saison yeast expression, orange peels, stone fruit. The yeast and the stone fruit are well-integrated. The floral hops are a bit odd, kind of conflict with the base. Nice, but not their best.
