Our first single-varietal cider, crafted solely from Golden Russet apples. Still, smooth, and complex - to be enjoyed like a fine wine. Pairs beautifully with pasta or seafood.

750mL bottle, pours a clear pale yellow with a tiny white head. Aroma is pretty faint, with light apple skins, some tannins, and a touch of apple core—very light. Flavour is lightly-to-moderately tart, with tart apple skins, nice tannins, some ABV, and tart apple core. Nice tart and tannic character. Not super complex but well-constructed and fairly bold. Solid.

Pale gold. The aroma is apple and pedio. Tart, but not great complexity. The pedio isn't on the palate so much, either. Tart apple finish. Again, the fermentation seems okay but not as complex as I prefer.

Poured from 750mL bottle. Clear blonde with almost no white head. Thin tart apple skins, very feint manure, a touch bland, but okay.

750mL bottle. Pours clear pale rose gold. Musty apple skins on the nose; a touch sweaty/sulfuric. Flavour has a pretty dry and musty apple expression, lots of skins, no carbonation. Some sweatiness. A nice rustic character. Pretty solid.
