Fermented with pronounced isoamyl acetate (banana flavored) esters, a common fermentation ester created when using English Ale yeast strains. Blended with maple, cinnamon, brown sugar, and vanilla flavors the beer smells like a Bananas Foster. Sweet caramel, burnt sugar, and whiskey really shining with a hint of flambéed banana in the background. Aged 21 months in 7-year Elijah Craig Bourbon barrels.
