Still shows an enormous amount of dense, fluffy head.
Smells wonderful. Zero oxidation and virtually zero acetic acid; only as much as necessary for the style. Deep base malts mix with medium malts to produce light caramel and toffee, while the wood is woven in to add slight oak, raisin and vanilla.
Fluffy, malty, tart but not sour with tight carbonation and excellent funky earth and mineral alongside oaky vanilla and dry raisin. Cherry-like flavors abound and the malt just keeps coming, balancing the beer perfectly. Reminds of pre-Palm Rodenbach, when that was the gold standard for this style. Just enough round acidity, that you want, with no excess, no vinegar, no cringe. Beautiful stuff; strange that it's so vastly different from the Cascara version I had quite a while ago (which was too thin and acidic).
