Convergent Evolution is a 50/50 blend of Spontaneous and Mixed Fermentation beer. For the 2024 vintage, we updated the approach by blending 2- and 4-year-old wine barrels to showcase the depth and complexity of spontaneous fermentation alongside the bright, vibrant character of mixed fermentation. The result is a beer with savoury walnut and leather notes balanced by apricot, pineapple, and citrus, finishing refreshingly with a rich, coating acidity. We hope you like it!

750mL bottle, pours a hazy golden with a medium white head. Nose has lots of bright barnyard funk, oak, and gentle citrus. Flavour is wonderfully funky and complex, with gentle citrus, lots of oak, and moderate funk. Wonderful complexity, transitioning quickly from funk to citric. Excellent.

750ml @ Ryan's (thx for the beer, man!) shared with Alex, Phill, and Josh, trying to figure out the Okanagan trip because weather is preventing us from Golden Ears camping 😬.
Aroma: limbic funk, some sulphuric notes.
Taste: along the same lines, quite acidic, a bit aggressive sulphuric component. Noticeable acetone notes in the back.
Overall: nice try, but it requires some sophistication to perform.

Hazy pale amber, no head. Rich woody, vinous aroma has a bit of leather in there as well. Some acidity and carbonation, a fine vinous accent in the finish. Some warmth to this as well. Good complexity, not the most complex of their beers but it’s good.

Poured from 750mL bottle (2024 vintage; pkg 2024-05-30). Lightly hazed yellow gold with small white head. Gentle funk with hint of walnut and citrus, and a lightly creamy texture, blends nicely with a light tartness.
