Barrel Aged Fortified Fine Cider

Royal Cider is a fortified cider, a rare & brilliant example of craftily using British cider apples in the same way you might other fruits like wine grapes.

This is achieved by sending off Foxwhelp cider to be distilled to a pure spirit which is then added to a blend of Dabinett & Foxwhelp dry cider to age in rum barrels for 12 months. Cyder Royal appears in "Aphorisms upon the new way of Improving Cyder" by Richard Haines and published in 1674.

Deeply burnished in colour, ripe brown sugar & fruit character soaks up all the flavours of the rum barrels beautifully. The apple spirit gives this fortified cider a wonderful appley depth. Think of this like a semi dry sherry when pairing it with fine foods like the best blue cheeses or Jamon Iberico or other vegan salty savoury snacks. Alc. 20% vol

Deep chestnut brown with a thin beige head.
Nose is stewed fruits, vinous, rum barrel, caramelised apples, spice.
Taste comprises stewed apple, caramel, booze tunes, herb, spice, rum barrel.
Full bodied and some, fine carbonation, drying close with a big kick in the bollocks boost.
Solid sipper ... desert wine like.

500ml bottle from Fine Cider Co. Rich reddish-orange dark amber brown colour, no head and aroma of apple, sherry, wood, booze. Taste is sweetish & tangy, warm boozy, appley, juicy note, and brown sugar, dried fruity, woody, rum barrel, nutty, spice, earth, with some drying tannin. Full bodied, low carbonation, dry earthy boozy tannic finish. Very sippable.
