We are excited to introduce Jelen, a Tmavé Speciální that marks a new collaboration with @deercreekmalt in Glen Mills, Pennsylvania. This project allowed us to explore their unique portfolio, specifically the use of buckwheat—a “pseudograin” prized for its long culinary history and nutty, earthy characteristics.
Jelen, which is Czech for “deer,” is left unfiltered and pours a deep mahogany brown with an off-white head. The nose offers aromas of baked pumpernickel bread and light herbal hops. On the palate, a balanced hop bitterness complements the 6.0% ABV, with notes of almonds, bread crust, and baker’s chocolate. The beer finishes with a smooth mouthfeel and a lingering earthiness.

Pours clear mahogany into a willi. Mocha head with excellent retention recedes leaving scant sheets. Pumpernickel and molasses aromas. Soft with sweet caramel and mild bacon upfront turning to hot toasted pumpernickel and bark in the medium length finish.

Pint at the Roost pours a murky brown with some nice, lacey beige head. Nose is malty and nutty, nicely doughy too. Chewy in the mouth, German brown ale, buckwheat shines. Dry, long, light tannins. Nice.
