Blend of Fife apples and cider apples grown in England and Scotland. Cider varieties used were Black Dabinet from Oxfordshire, Tom Putt, Colloget Pippin and Chisel Jersey from Monimail, Fife and Katy, White Jersey, Debbie, Browns Stoke Red from Novar Cider on the Black Isle. Other cider varieties, including Michelin, Hastings, Kingston Black, Ellis Bitter, Somerset Redstreak and Foxwhelp, came from my trees and from my friends at Naughton Cider. The cider varieties bring strong rich tannins married with bright, clean acidity from the Fife-grown apples. Serve slightly chilled and pairs well with red or white meat dishes, mushroom s selection of cheeses.
Pressed Autumn 2024, bottled July 2025.
Best before 10/2029 - but likely still great after that.
Full juice, wild fermentation. No added sulphites, but contains naturally occurring trace sulphites.

750ml bottle from Aeble. Hazed orangey golden colour, short-lived white foam head that dissipates to a thin rim and aroma of soured apple, fruity, juicy, with funk. Taste is tart, tangy, juicy apple, fruity, earthy, with funky notes, acidity and drying tannin. Medium bodied, light carbonation, dry tart & tannic finish. Nicely drinkable.
