Seasons Past is our series that focuses on experimental blending and aging of our farmhouse beers. We listen to the beer and let it dictate the time needed in the barrel to coax out all the delicate nuances we can. This is a blend of a three year old barrel of Oak Theory with a barrel of Saison. The rustic funk of the Oak Theory is balanced by the bright citrus of the Saison.

Bottle.
A- Gold color, hazy liquid, white head.
A- Oak, funk, lemon, white pepper, sourdough.
F- Acidic, lemon, funk, oak, white pepper.
P- Medium body, average texture, medium carbonation, acidic finish.
O- Highly acidic and quite fizzy. Lots of white vinegar and peppery notes. Liked it less as it warmed. Just didn't do it for me. Have been less than impressed with Casey's as I continue to have them. Not sure they meet the hype for me.
