Mixed-fermentation sparkling ale conditioned on Neighbourly Wine Co. grape skins

2 Years in the making! Brewed using 100% locally grown pilsner and wheat malt from Field 5 Farm. This beer is a blend of 2 year old beer aged in Rathjen Cellar barrels with our house mixed culture allowing it to develop natural wine-like complexity over time. We carefully blended the beer with 120kg of Gewürztraminer grapes from our pals at Neighbourly Wine Co. The grapes were pressed at the winery and went into our tank less than 2 hours later, where the beer underwent another fermentation using wine yeast while conditioning for a month on the grape skins. Finally, we can conditioned this labour of love to sparkling perfection.

355mL can, pours a cloudy pale blonde with a small white head. Aroma has plenty of lacto, some wild bugs, and a touch of faded grape skins. Flavour is along the same lines, with dry, faded grape skins, wild bugs, some bitter wild yeast, and a touch of lacto. Finishes dry, bitter, and faded. Pleasant enough.

This one is very pale. The aroma has some of that vinous character, but is a bit odd. On the palate, it's got a bit of tartness, but also vinous notes. Moderate acidity. Not bad.

355mL can. Pours a very pale hazy blonde with almost no head. Very musty, vinous nose. Flavour is quite tart with a more subued vinous character than the nose, very little malt character. Tastes more like a sour wine spritzer than a beer. Pleasant, but unimpressive.
