Basswood honey - produced from the fragrant blossoms of the basswood tree - is pale, spicy, and peppery. The mead derives its distinctly fresh flavor from this traditional West Virginia honey.

Bottle: Almost completely water-clear.....a faint cast of pale yellow....still and headless. Honey, alcohol aroma. Taste is very light honey, with a peppery, alcohol warmth. VERY dry.....not a great deal of honey sweetness....but the dryness is a pleasant difference.

Bottle. Honey and herbal pepper aroma. Very pale yellow. Very lightly sweet honey initially followed by bitter dry herbal hay and pepper flavor. Dry finish. Pleasant - like a light dry white wine.
