Naming:
"Hyotto" is a Japanese word that means "maybe" or "perhaps". It can be used when predicting an outcome. This felt fitting for the more experimental elements of craft beer brewing, where one can use one's many years of experience to judge what a combination of hops may come through as, or how a yeast strain's esters might interact with them. The new understanding of thiolization, where compounds are released, has added a new layer of this, and frankly there is an element of trial involved in this. This mini series summarises this. We know it'll be tasty. We know it'll be juicy. But exactly how it will taste? All we can say is "Hyotto..."

KBC HYOTTO EXPERIMENTAL IPA 6.5%

Brassy matte gold with thick rocky light beige foam and a bright woodsy fruity hop bouquet. Medium bodied with a slightly dry finish. The taste has slight peppery saison type notes which were reminiscent of a Belgian IPA.

Can from Seijo Ishii. Dull medium golden orange, quite cloudy, with a thick, fine head. Nose is pineapple, mango, passion fruit, grapefruit. There is also some resin and dankness, and a bit of the spice of Belgian yeast, and malty biscuits. Sweet and fruity, dank and resiny, lots of tropical fruit, lots of resin, quite bitter, Belgian yeast. There's a lot going on here, but the result is somewhat depressing. Dank, dark, harsh. Not the kind of IPA I want at all. I feel all these experimental hop formulae have just gone off the cliff. Good old WC IPA like their latest A Beer Odyssey was so much brighter and happier.
