Shark Tooth is a Single IPA utilizing Perle, a sweet and doughy English base malt. A blend of Warrior, Chinook, and Mosaic from Billy Goat Farms bursts with aromas of pine sap, dank hop yards, and dark summer berries. An additional charge of Riwaka adds layers of pineapple and lime throughout its fluffy body.

Melon and plum with a bit of ripe tropical fruit on the finish. Big malts show rich honey and white bread-like character. Pretty clean and snappy, though making me wonder if it needs a bit more acidity.
No, it's actually got plenty. Piney and woody bitterness is quite prominent initially. Well-attenuated, but substantial malts bring balance and there's a lingering pepper, earth and pine. Really enjoying the uptick in bitterness in the style, as of late. Hopefully it keeps going.
