Digestif is a dark, herbal, bitter, digestif tonic of a beer.

It was created from a blend of two dark beers, produced in July 2022 and February 2023. These contained dark roasted malts, for their dry cocoa character, as well as double roasted crystal malt, which lends a bitter-sweet dried fruit richness.

Both underwent spontaneous fermentation in old French oak barrels for over three years. The French oak lending woody spice and tobacco aromatics, along with an extra dose of drying tannin.

The finished blend was dry-hopped with a very large dose of whole-leaf German and Slovenian hops (for the brewers; this was 15 g/l for 3 days). The hops were selected for their herbal and peppery character and A large quantity was used to provide enough balance to the rich malt character. We wanted an overal impression that leaned more into bitter then sweet, rather than sweet with a touch of bitterness. As such, it goes down very well after dinner.

Bottle via the online shop. Mostly clear deep cola brown with a thick fairly loose lasting beige foam. Looks boss. Nose has sweet balsamic. Old oak. Brett. Light nutty chocolate malt. Leafy peppery aged hop. Taste is semi sweet with a decent tangy bitterness throughout. Foamy rolling carbonation. Bit of twangy tartness to finish. Minimal acidity without being overly complex makes for an easy drinking beer in the style of a well made Oud Bruin. Class.
