Naming:
Toi Toi To's name in Japanese is made up of kanji repeating 10 and 1. Japanese has many readings for kanji, and "to" and "i" are readings of 10 and 1 respectively. These kanji are also similar to plus (+) and minus (-) signs, and we decided to wish a little for the year ahead. Every year has positives and negatives but we hope that ultimately this year finishes on a positive.
Food Pairing:
Spicy fried prawn "karaage", braised spare ribs, and rich cheese tart

Big hop bouquet on a deep gold body with thick fluffy off-white foam. Loads of piney and tropical notes, sweet malts but a certain boozy heat and hop burn detracts. Alright with hints at the possibility of greatness.

Can from the brewery, mail order. Big tropical fruit nose, papaya, mango, orange, grapefruit, passion fruit. Very hazy, glowing orange with a low, fine head. luscious tropical fruit flavors, over-ripe mango, papaya, grapefruit, white grapes. Very complex. Malt is just a bit heavy, maybe too much dextrose. Finish is a bit floury and bitter. Hops really shine. Would like a more traditional WCIPA malt base and crisper body. This really isn't West Coast in style.
