Hazy Rye IPA with Mosaic®, Mosaic Cryo®, and Erebus®
This new entry in our venerable Rye IPA series focuses on two hop varieties with berry-aromatics: Mosaic and Erebus. We first used Erebus back when it was an experimental variety: HS16660. It has one of the highest concentrations of the Thiol 4MMP ever measured. The original dry hop bill for The Dragon was inspired by selecting hops that had the highest concentrations of this citrusy-berry-dank aromatic at the time!

Can (4/28/26) shared by CLW--thanks, Chris! Cloudy light yellow with thin head fading to a ring, light lacing. Aroma is strong grapefruit, citrus, berry, herb, tropical fruit. Taste is strong grapefruit, berry, rye, slight band aid. Smooth texture, soft carbonation, finish as taste. A lot going on and good strength without perfect harmony but good.

Aroma and flavor is bold juicy citrus with hints of passionfruit and mild herb. Flavor follows with the addition of berries and melon. Super soft mouth feel with plenty of juice character with great Chug ability. Soft herb bitterness. Nice balance.

Draft at Sapwood Cellars. Hazy golden pour, thin layer of wispy foam. Initial fruity aroma. Taste brings notes of citrus, unexpected for a rye IPA. Oat whip feel also. Not much rye detected ..
