Our newest collaboration was born during a recent trip shared by friends and co-owners from Monkish, Side Project, and Sante Adairius Rustic Ales. Inspired by a hotel phone greeting that quickly became the unofficial soundtrack of the trip, one “Shello!” turned into hundreds, and eventually, a beer.
A West Coast IPA brewed with Simcoe and Nelson Sauvin hops, Shello! pours deep golden yellow with a light haze. Aromas of zested orange, white grape, and pine lead into flavors of citrus peel, fresh grain, and subtle tropical fruit, balanced by a clean bitterness and crisp finish.

Classic thickly-hazy WC IPA....
Smells like a NE style, with fruity yeast and round, pillowy base malt. Only the significant hop acid gives any indication of intended style, though I've smelled more WC-leaning IPAs that Trillium has classified as an NE style. Whatever the case, it's bright and challenging with pine-laced tropical fruits and woody, lush, green Simcoe.
Good and bitter up front with soft-ish malts helping balance but then quickly succumbing to a rush of bark, resin and chalky pith. Ends on this drying note, somewhat abruptly, though with a bit of juicy berry and white grapefruit lingering.
Good use of NE texture and malt with WC hopping/bitterness.

Pours clear gold into a tulip. White head with good retention recedes to glop surface. Mango, caramel and passion fruit aromas. Crisp with hot grapefruit and tangerine pith and peel front to back. Lasting grapefruit pulp finish.
