Lemon Glass is a highly aromatic modern saison, that brings together old world technique and new world hop breeding.

It was made from a traditional turbid mash using floor malted Maris Otter and rye. This provides the complex carbohydrates that fuel our long, slow spontaneous fermentations. Bitter New Zealand hops were used during the boil, bringing wonderful aromas which are then amplified and enhanced by the activity of the wild yeast. Fermentation took place in old white Burgundy barrels, adding complementary aromatics and balancing oak.

The blend was dry-hopped with whole-leaf Hallertau Blanc hops from the 2025 harvest. These fantastic hops bring a hit of new-world inspired white grape and citrus, while retaining some herbal intruigue that lays bare their old-world home.

Glass is a top tier Mills and this is a top tier Glass. White Burgundy barrels lift heavy and Hallertau hops get the reps in. Classy gear. Juicier than the 1980 Mr Olympia line up (Mike Mentzer was a bit of a mardy arse tbf).
