Flying Island is a new blend composed of both stout and wheatwine barrels. There was a single virgin oak barrel that held our wheatwine for 20 months that was bursting with robust oak notes and a distinct ripe plum character. Stouts played well with this rowdy wheatwine barrel, and Flying Island was created. The character of this blend is anchored by a rich dark chocolate note, supported by notes of fig, Nebbiolo, oak spice, and tres leches cake. The palate is rich, round, and surprisingly smooth for its strength. Complex yet highly accessible, we are very excited to share this new blend.
