Bell’s Wheat Project (2005) is an experimental foray into the development of complex flavors in beer.
The Project comprises five new ales, four in series and one specialty strong product.
The first four, Wheat 2, Wheat 4, Wheat 6 and Wheat eight are all made using 55% Wheat (either wholly or mostly malted) and 45% Barley malt.
The barley malt makeup is exactly the same in each of the four and consists of three different malts.
The total amount of grain in each of the four is also exactly the same, so each of them should have a virtually identical original gravity. The type and amount of hops in each of the four is exactly the same. And the processing through the brewhouse and fermentation is also exactly the same. The changing factors between the ales are the composition of the 55% of wheat used and the type and number of yeast strains used. In Wheat 2 the 55% of wheat is made up of two different kinds of wheat malt, and this ale is made with two different yeasts. Wheat 4 is made with four different wheats and four yeasts. Wheat six and eight made with six and eight wheats and yeasts respectively.
The final product, Bell’s Wheat Love Ale, is made with the eight yeasts of Wheat eight and is a strong, but relatively light colored, “wheatwine.”

12 oz bottle. Pours a heavily hazed golden with a white head. Yeasty pear and clove aroma. Yeasty clove and bubble gum flavor, pear, wheat and a bit of orange peel. Pretty decent, more or less a weizenbock, though, so not quite what I was expecting this evening.

Bottle. Sweet orange, yeasty wheat malt, and light spice aroma. Hazy gold yellow with a ginormous creamy white head, nice rings of lacing. Sweet banana orange, wheat malt, and spicy flavor. Medium creamy body, moderate to lively carbonation.

Bottle courtesy of Captain Cougar on 04/17/2010 at the 11th Richmond RateBeer Gathering. Clear golden amber body with a small frothy white head. Sweet apple and wheat aroma. Sweet wheat and pale malt flavor with a slight apple touch. Medium body with moderate carbonation.

12 ounce bottle from Captain Cougar. Thanks! Sampled at the 11th Richmond Ratebeer Gathering, 4/17/10. Pours a clear golden color, slightly viscous looking, nearly no head. Aroma of honey, bread, raisins and dry peach-like fruity notes notes. The taste is sweet honey, dry fruity notes, caramel, toasted malts. Medium-full bodied. Pretty good beer.

12 oz bottle generously shared by csbosox. Batch 7155. Pour is slight hazed orange golden with a smallish white head that falls quickly with not much lacing. Aroma of phenols, weird clove, mild grainy lemon citrus and not too much else. Taste is the clove phenol, bright vanilla oak, wheat, some more of the clove - finishes with more weirdness. This is kind of a phenolic, wheat, sweet mess. Palate is medium, mouth coating, finish is actually much cleaner than expected. I wanted to love this, but the age really made it fall short. Thanks for sharing Chris.
