This barrel aged saison spent almost 3 years in the Bozeman Underground in a combination of French and American oak barrels. During a long and slow secondary fermentation with multiple Brettanomyces strains, the beer developed the perfect character. Grapefruit was added to individual barrels and allowed to referment during the final months of aging, which added a hint of citrus. Oaky, earthy, fruity, and spicy flavors make this a complex and refreshing experience.
