23% Eisbocked Barleywine - Wat is de limiet van ons bestaan? Dit is het summum van technieken en processen. Bedacht door ons, om de grenzen van bier te verleggen naar ongekende terreinen. We brouwden 55 uur aan één stuk voor deze batch, maischten vier keer na elkaar, kookten de wort drie uur en eisbockten het bier van 19% naar 23%. Deze versie rijpte daarna iets meer dan twee jaar op Bordeaux vaten!

We brewed this batch for 55 hours straight, mashed four times in succession, boiled the wort for three hours and Eisbocked the beer from 19% to 23%. This version is then barrel aged on Bordeaux barrels for a bit more than two years!

Clear dark brown beer, practically no head. Aroma: lovely, all chocolate, dried fruits, alcohol, red wine, vinous, a bit oxidized, Madeira, some coffee, a hint of soy sauce. MF: no carbon, medium to full body. Taste: good roast, lots of alcohol, oxidized, more Madeira, Port, soy sauce, dried fruits, soft acidity. Aftertaste: caramel, alcohol, a little bitter, more roast, alcohol, sugary, pretty oxidized, a bit earthy, dried shiitake mushrooms, bitter, some coffee, good stuff!
