This unique brew was created in many of the traditional ways of this style. Brewed as a raw ale (the wort (sugary liquid that will be fermented to create beer) is not boiled). Ingredients used pilsner and rye malt along with juniper are traditional. Our own take on this style adds chamomile, hops, and maple syrup. We used a Norwegian yeast called Kveik (not traditional) baker's yeast was traditional. This method is far less stable and prone to bacterial infection. Keeping with tradition this beer is low carbonation. This ale has unique aromas of candied fruit and wildflowers. Flavors of lemon, light pine, and spice. Full bodied with bold flavors.

Earthiness and herb with a bit of bready sweetness. Slight funk and good acidity.
Cherry, honey, blueberry skin and light acidity from the yeast. Soft, sugary texture. A bit more raw sugar character than I'd like, but maybe not very off-style. Cidery notes linger. Certainly a valiant attempt, but I don't think it drinks too well on account of all of this sugar character.
