WCIPA with Chinook, Mosaic, and Idaho 7 hops
This West Coast IPA is meant to be a playground for hop varieties but we really loved the hop combination on the first batch and wanted to push it a little further with changes to timing of hop additions and other inside-baseball secret brewer stuff. We think the Mosaic, Chinook, and Idaho 7 pop even more and meld those old school Pliny-esque flavors with a more modern berry-like profile.

Teku glass at the Teku place in Seattle. Can barely read the font on these menu tvs.
Pretty medium golden brew, lingering lace.
Green citrus nose.
Grassy, citrus, medium lingering pith, long herbal draw that keeps going through the finish. Spicy green numbness & some amber maltiness on the finale.
Texture wins over flavor.
Okay+ leaning good+.

Can from Tavour. Pours clear gold with a moderate white head that didn't try very hard to persist. Aroma of dankish resin. Med plus body. Malt isn't strong enough to render this undry. Very nicely bitter. Flavor of dank resin, citrus/pine and maybe some green melon. Possibly grapefruit pith. Excellent.

On tap at Holy Mountain Phinney, pours a clear bright golden with a small white head. Aroma is bright resinous hops, big dankness, pine, and a touch of melon. Flavour is bitingly bitter, with huge woody piney hops, a little melon, citrus rind, a touch of dankness, and crisp biscuity malt. Piney, bitingly bitter, and clean. Wonderful.

On tap at Holy Mountain - Phinney Ridge. Pours clear golden blonde with a white head. Dry pine, tropical, and dank resins on the nose. Flavour has a great woody pine character, gentle tropical fruit, lots of oily resins; finishes bitter and piney. Great hop expression, loads of Chinook. Excellent.
