Rich, complex and unique. Abbey style ales are transcendent, and ours stands proudly in the ranks. Aged in brandy barrels, Holy Sheet is a mahogany ale brewed with Belgian Abbey yeast, candi sucre, and unique crystal malts. Rounded, spicy caramel flavors mixed with vinous notes and oak overtones, this ale pairs well with quiet contemplation…

Sharp on brandy aroma in beginning. Some prune and raisin. A little booze. A touch touch barrel on what would otherwise be a good Belgian strong. Pours dark brown with OK head and lacing. Light bittersweet finish. Pretty good balance. Tap at Churchkey.

Bottle. Poured a ruby brown color with a fluffy white head. Aroma was sweet fruit notes, caramel malts, brandy, vanilla, some light wood. Flavor was similar, fruit notes, caramel character, brown sugar. Alcohol comes out at the end, but is pretty enjoyable and a nice sipper.

Minus the barrel aging, this already a pretty good dubbel. Barrels add just the right amount, woody, slightly sour, smoky. Aroma is yeasty, herbal, taste brings in some molasses sweetness. This would probably be a decent dubbel without the aging, so the added accents are a nice touch.

From the June 2013 3R6P tasting. +++ Sampled from a 750 ml brown bottle this beer poured a dark brown color with a medium sized foamy tan head that left a bit of lacing. The aroma was sweetish caramel, tart apples and brandy. The flavor was sweet and malty caramel, tart apple and brandy. Quite boozy. Medium length finish. Moderately full bodied. Ok but disappointing.

Bottle at the 2014 RBWG, thanks! Pours a hazy gold with a gray head that dissipates to the edges. Aroma has notes of caramel and sweet grains as well as a bit of light fruits. Flavor has notes of earthy grain with caramel and a bit of mustiness.
