This is a recipe formulated with references to ales produced in Colonial America. The beer is made with pale malt, malted rye, and a small touch of smoked wheat to recreate a rustic malt flavor. The addition of local spring honey from Carlisle Honey, and Carlson Orchard cider add an element of malic apple and floral honey. Light body ale from the high attenuation of sugars makes this a very quaffable beer fit for tankards! A toast sweet liberty!!

Malty with a pinch of floral apple character. Rye spice is minimal. Not hugely aromatic.
Dry and moderately bitter. Not thin, and the cider and honey are both fully attenuated. Some interesting remnants of pepper, apple skin, very slight malic acid. Wouldn't hate a touch more malt depth or sweetness, but maybe this was the style. Never thought I'd be complaining about a beer being too dry, but here we are.
