Nothing Stays the Same always works with locally grown peaches, however I do take liberty to explore different base beers and fruit incorporation methods. This blend features local yellow peaches bought at auction from a farm in Patrick Springs, VA. These peaches were co-fermented with a hoppy base Saison barrel of No More Clouds. This was a hefty base of about 60% pils and 40% white wheat malt. It received a heavy dose of Hallertau Blanc, Strata and Nelson Sauvin hops which gave it some lovely tropical aromatics as a baseline.
There is a lovely fullness, and juiciness (for lack of a better term), that almost reminds me of modern day hoppy beers. More body and depth at 7.7%, juicy peach, low acidity, and layers of almond and baking spice.

750ml bottle pours a murky gold with some clumpy white head. Nose has lemon, straw, green grape,Β a little candy sugar. Flavors all follow. Some salinity on the end, lightly tart. Medium bodied. Feels big. 7 7 7.5 7 7
