Nose is toffee apples, vanilla, cream, spun sugar undercut with light acid, sherry, vinegar, oak - complex. Taste is sherry, the wine tones from the casks is very pronounced but not overpowering, lots of ginger and pepper, then grapefruit, wheat, light acid sourness leading to cream and sugar notes in the dry finish. A good example of how to add depth and texture in casks. It’s an outstanding beer but is tempered for me, because I find pronounced ginger tastes a little off putting, but this is preference.

’Edelbier’ matured on médoc barrels. Off-white, delicately structured, fairly stable head, colour of ’old gold’, clear. Complex and rather powerful aroma of white wine, oak, grapefruit, cognac, bourbon, green hops, freshly grated ginger, mint, star aniseed, tea, pineapple, a touch of eau de cologne and champagne. Vivid fruitiness in the taste with citrus peel and quite strong, almost champagne-like carbonation, caramelly and bit honeyish malts covered under a complex of fruitiness and spiciness (aniseed again, ginger), finishing leafy and peppery hop bitterness as well as rather strong, whisky-like alcohol, a combination enough to completely dry mouth and throat, to the point where it becomes even a bit astringent. Had the finish been more benign, this would have been a truly great ale.

Lightly hazy gold beer, big pale cream colour head. Palate is smooth, light and dry. Very mild fine carbonation. Very light gueuezy sourness balanced by mild sweet generic fruits. Little florlaness. Light finish. Mellow and drinkable.

slightly hazy golden amber color. Big sour, tart nose with oak, various spices and a bit of hoppiness. The mouth is very oaky buttery in the mouth that is a bit too much. I don’t think I like the oak, but slightly sour. Very strange taste, that I don’t necessary like. The finish is very oaky. i loved the nose on this, but after that, much less so.

Bottled @ de Molen tasting, small sample. Slight hazy yellow color, short to no head. Quite viscous. Aroma of loads of wine, grapes, slight barnyard and horseblanket, fruity notes like apricot. Like in between a wine and a gueuze. Slight sparkling. Bit sour in taste, bit sweet. I quite liked this one.

Bottle sampled @ De Molen 2nd Tuesday tasting. thin white head. Funky aroma. Slightly hazy golden blond pour. Slight sourness. Slight wood. Not bad.

Bottle 330ml. @ home. [ As De Leite Cuvée Mam’zelle ].Unclear medium orange color with a large, frothy, good lacing, mostly lasting, white to off-white head. Aroma is moderate malty, pale malt, dough, moderate to heavy hoppy, citrus - tart citric, moderate to heavy yeasty, barnyard, funky, grape, light cheesy. Flavour is moderate to heavy sweet and light to moderate acidic with a long duration, funky, barnyard, citrus - fruity tart, grapes, yeasty, light baking yeast - dough, sulfur notes. Body is medium, texture is oily, carbonation is fizzy. IMO. a bit like a good triple blended with a nice Gueuze. [20140226]
