Trouble in paradise! A frivolous damsel enters the scene. It is a young lady that over a few months matured in oak wine barrels, which gave her a deep but soft-bitter tannin aftertaste. The taste is full and complex because the brewers induced a controlled souring during the ripening process. The Mam´zelle is by origin a blond beer. Ripening gave her a soft red glow. This is the reason why she is called ‘high-blond’. The alcohol percentage is 8.5 volume. Brewers maintain that she is ‘untameable’.

330 ml @ Delirium Monasterium, Brussels. Unclear orange body with a nice white head. Delicate aroma of citric fruit, spices, barnyard, mild funk and some oak. Flavor is sweet pale malt, citric fruit, mild oak, moderate funky, spicy, some bitterness and yeast. Quite complex in flavor, actually a bit unusually but very nice. Fine balanced body and nice, smooth aftertaste with both sweetness, acidity and wooden funk. Interesting and tasty.

Hazy medium amber colour, two finger frothy off-white head, mostly diminishing (but slowly), good lacing. Sour aroma, lemon, star fruit, peach, apple vinegar, wood, ginger, tart. Smooth medium sweet and sour taste, fruity, lemon, woody, spicy notes. Sourish finish with wood and spice (ginger, anis) notes, medium body, oily to sticky texture, soft carbonation.
