Our beloved Saison brewed with barley and spelt from Deer Creek Malthouse, hopped with lots of our favorite Hersbrucker, and fermented with our 2020 Foraged Yeast Culture. It was conditioned in the bottle with our mixed culture for maximum tiny fluffy bubbles and extra character. This batch reminds us of others, and presently has notes of lemon bubble gum, yellow or green SweeTarts, wild cherries, tamarind soda, and some dusty dried pineapple wedges.

Bottle at the brewery: pours golden with a white head. Aroma is dank, basement, funky, mold, some fruitiness... taste is earthy, slightly tart, a bit dirty but with a deep fruitiness underlying it all.

On tap at the Modern Times Festival of Funk. It pours a light hazy orange color. The aroma is bready with some light funk and herbals. The flavor is full with spicy brett funk. Light, but creamy on the palate. Very funky and bubbly. Good.

Bottle shared in NH with AJ - thanks! Pours mostly clear, dull yellow with a foamy white head. The nose is hay, citrus rind and mellow grass. Light sweet flavor with pronounced bitter hay, lots of rind, orange, grass. Light bodied with fine, massaging carbonation. Moderately dry to finish with more bitter hay, husky grains, more citrus rind. Fair, though a bit overly bitter.

750ml bottle @the dmac Monmouth Park Horserace Gathering-thin white-cloudy yellow/gold. A-orange, brett-yeast, lt malt-bready. T-soft lt malt, brett-yeast.

GABF 2013. Pours a fairly clear yellow appearance with a white head. Herbal honey, a bit twangy, lemon, vanilla, hay aroma. There was kind of strange nuttiness in the flavor once you got past the bretty, peppery yeasty, and citrusy notes. Kind of disappointing.

Bottle shared with Leighton. Enjoyed at 55F in stemware.

A - Incredibly bright yellow 2 finger head. Tons of foam

S - Smells grassy with some brett notes. Honey and wheat

T - Rustic taste like mineral water and brett leather. Dry overall, lots of unmalted grain like chewing on a piece of wheat. very bitter throughout with a nice hop profile.

M - Medium body, dry finish, hard to drink a lot of this due to the dryness

O - I’d say this is a good saison but 2 people couldn’t finish the bottle. too bitter perhaps?

Bottle at Monmouth Park tasting. Pours clear yellow with white head. Nose and taste of peppercorn, wild yeast, oak, graham cracker, lemongrass, light spice and hay. Medium body.

Bottle. Cloudy pale yellow color, massive head, solid lacing. Aroma of rising white bread dough, lemon, peach. Taste is peppery straw, hay. Very tasty.
