Just all mineral, must, earth. Funky rice. I know it's not koji, but that's what it reminds me of. Fruit rind acidity.
Tart and fruity with rice hull and sweetness. Earth and lychee on the finish are a bit of an odd combo. Maybe a bit more lactic acidity than I'd like, though it isnt punchy. Just not sure it's what I want with the rice, though I assume they're trying to mimic the acidity in sake. Lots of peach-guava-lychee lingering.
