5.7% Barrel Aged Herbed Saison - Het is ondertussen al enkele jaren geleden dat we samen met de Balten van Dundulis en Labietis een Herbed Saison met Moerasspirea, Duizendblad en Bijvoet maakten. Van deze batch hielden we één houten vat achter. Op dit vat voegden we zeven verschillende wilde brettanomycesgisten aan toe en lieten het anderhalf jaar op vat rijpen. Het resultaat is mogelijks een van onze mooiste barrel aged bieren geworden. Een frisse kruidigheid, houtlagering, funk, mooie zuurtjes en de Gentse wilde natuur in een glas!
5.7% Barrel Aged Herbed Saison - It has been several years since we collaborated with the Balts of Dundulis and Labietis to create a Herbed Saison with Meadowsweet, Yarrow, and Mugwort. We retained one wooden barrel from this batch. We added seven different wild Brettanomyces yeasts to this barrel and allowed it to mature for a year and a half. The result is possibly one of our finest barrel-aged beers. A fresh spiciness, wood ageing, funk, lovely acidity and the wild nature of Ghent in a glass!

Slightly cloudy yellow beer, small creamy dense white head, a little stable, a bit adhesive. Aroma: lovely, lots of brett, fruity, white grapes, white peach, some white pepper as well, woody, a bit herbal nice stuff! MF: lively carbon, medium body. Taste: nice, good bitter touch up front, pleasant acidity, very fruity, lots of peaches, brett, some tannins, apricots, some tangerines, a little bitter, nice acidity. Aftertaste: white grapes, a bit peppery, spicy, pleasant brett notes, somewhat yeasty, nice, very complex, lovely beer!
