We emptied 2 presses worth of Porter's and 2 presses worth of Dabinett pomace into a tank, added just enough well water to wet the pulp (130 gallons) and let it macerate for 1 day. On October 21st, we bucketed the wet pulp back onto the press and re-pressed it to get 116 gallons. The second pressing was low sugar, around 9%, but very dark amber in color and full of tannins. We mixed it with 40 gallons of Golden Russet juice to bring the brix to 12% and left it alone in barrels to ferment with wild yeast. It took forever and we were not able to bottle it until the end of March.
Tart and mild, with a light spritz and smidge of residual sugar, this is a summer cider- low alcohol, smooth, refreshing, pleasant. Pettilant, off dry, 7% abv. Label art by Leila Sherman. 75 cases made.

Mojito glass at home. Dusty, medium pale gold, flash of head.
Tart & herbal, almost veggie nose.
White wine, grassy, lemon, caked yeasties, some band-aid, herbal finish. I feel like the bittersweets drag this down from the bright, refreshing beverage it could be.
Watery, half-tart, middle low carb, slightly boozy, mineral finish.

Just okay. If it was dirt cheap, I suppose I'd feel okay about it.
