Porter’s Perfection is a bittersharp apple that ripens in late October, usually with high brix. All apples for this cider came from our certified organic Albee Hill orchard. This cider was close to 18 brix at pressing and the wild yeast finished up at around 4. The result is an intense, ‘big’ cider with tons of racy acid underlain by solid, dry tannins, plus plenty of alcohol and sugar. This deep and layered cider leads with ripe red fruit aromas laced with citrus followed by bitter herbs, leather and rocks. Primary fermentation in neutral oak with wild yeast. Filtration at bottling. Still, semi-sweet. 40 grams/liter residual sugar. 8% abv. Label by Lou Buonincontro. 40 cases made.

Brown 750 from their bottle club. Lo-ball at home.

Amber pour, very slight suspension that settles down eventually.
Cherry skins, apple pits, a little veg, very minute maple, sawdust nose. Not very bold.
Semi-sweet, cherry & sweet corn, oaky apple core, crap apple sharpness, lemon iced tea, old-fashion cocktail essence. Orange pith on the tail. Tart pucker middle on for contrast.
Warming but just barely. Thin but a touch greasy. This would have slapped at 9.5% Not as dynamic as good years of Albee Hill.
