We’ve taken our dark farmhouse base and dry hopped it with Falconer’s Flight and Centennial hops. The combination of yeast and hops create an explosion of flavors, and this beer will continue to develop as it ages.

Draught @ CBC 2016. Pours dark brown with an offwhite head. Aorma of malt, yeast, light coffee, caramel, light vegetables. Flavor is malt, caramel, little grainy, light coffee, vegetables. Medium body, average carbonation. 130516

Bottle. A- Slightly funky, spices, dark rotten fruit. A- Dark brown color, dark liquid, tan head. T- Rotten fruit, slightly funky, spices. P- Medium body, average texture, average carbonation, off balanced finish. O- Odd. Didn’t expect it to be dark. Had some spice but mostly a spoiled fruit taste. Meh.

Tap at Ale Arsenal. This was very solid, but the Falconer did not really show itself. It is one of my favorite hops to brew with and I was so excited for the result. A good beer, but not their best.

Draught @ Fermentoren, Halmtorvet 29 c, Copenhagen, Denmark 1700. [ As Prairie Ape Snake ].Clear medium black brown color with a average, frothy, good lacing, mostly lasting, off-white head. Aroma is moderate malty, dark malt, tart, sour, brett, funky. Flavor is moderate to heavy sweet and light acidic with a long duration, sweet malt, dark malt, tart, berry - fruity, funky. Body is medium, texture is oily to watery, carbonation is soft. [20160511]

Bottle from Boxbeers. Black with a lasting beige head. Aroma is sweet, malty, dark malts, bretty and moderate hoppy - citrus. Flavor is quite sweet, light acidic and moderate bitter. Dry, light acidic and moderate bitter finish. A bit fizzy. 180616
