A hellaciously herbaceous collaboration of flavor. Collaborators: Sam Calagione, President & Founder, Dogfish Head Craft Brewery / Bill Covaleski, President & Co-founder, Victory Brewing Co. / Greg Koch, CEO & Co-founder, Stone Brewing
This saison has been infused with a herbaceous blend of Stone Farms and locally harvested sage, lemon thyme, rosemary and parsley and dry-hopped with Citra hops for a refreshing finish. First brewed in 2010, this citrusy farmhouse ale was named Saison du BUFF in tribute to the ad hoc coalition that Sam (Dogfish Head), Bill (Victory) and Greg (Stone) formed in 2003. Called Brewers United for Freedom of Flavor (BUFF), it was their way to show the beer industry that they were banding together to make room on the shelf for craft beer. Six years later this farm-to-kettle beer still boasts the use of freshly picked local herbs as well as Citra and Centennial hops to infuse crisp, savory, mouthwatering flavors.

Tap@Taphouse, Copenhagen (Stone TTO 27/11/2016) - gold yellow coloured pour with a white head. Aroma and taste is yeasty and fruity and floral grassy hoppy, some hay and straw, subtle citric spice bite, light herbal notes coming into the close.

Draft. A golden beer with a yellowish head. The aroma has notes of spices, yeast, straw, and malt. The flavor is sweet with notes of malt, spices, yeast, straw, and hops, leading to a bitter finish.

Rating #1899. $2.40 bottle from Wine Warehouse. I’ve rated the Dogfish Head version, which got a 2.9 from me overall - let’s see how this does. Pours slightly hazy golden with a small white head.Aroma of lemon, orange, heavy rosemary. Tasty slightly sweet lemongrass, rosemary, pepper. Fishes bitter. Looks like this one is slightly better than the Dogfish head version, at least according to my rating. Would have liked to sample these at the same time to truly compare.

Bottle (2016 version). Gold with a white head. 3+ Aroma of oranges, pepper, light dough, herbs. You could believe the herbs are as listed but thy don’t blast at you. -- A relief after the execrable Stone Saison. Medium bodied, carbonation not that high for a supposed saison. Hay and dough, some apricot, citrus, spices, herbs. Moderate bitterness at the less than dry finish. Not a great deal going on for 6.8%, but OK.

Herbal notes are very well-paired with saisons I find. This one is no exception. Nice licorice-y and piney notes from the parsley and rosemary. Very quaffable. Very good beer.

12 ounce bottle into tulip glass, bottled on 2/18/2016. Pours lightly hazy/cloudy golden yellow color with a 1-2 finger fairly dense white head with good retention, that reduces to a thin cap that lingers. Nice spotty soapy lacing clings around the glass. Aromas of big lemon, lime, apple, pear, rosemary, thyme, sage, parsley, peppercorn, wheat, cracker, bread, herbal, floral, grass, and yeast earthiness. Very nice aromas with good balance and compelxity of fruity/earthy yeast, spices, and light-moderate bready malt notes; with great strength. Taste of big lemon, lime, apple, pear, rosemary, thyme, sage, parsley, peppercorn, wheat, cracker, bread, herbal, floral, grass, and yeast earthiness. Moderate herbal bitterness and yeast spiciness on the finish; with lingering notes of lemon, lime, apple, pear, peppercorn, spices, herbal, grass, and yeast earthiness on the finish for a good bit. Very nice complexity, robustness, and balance of fruity/earthy yeast, spices, and light-moderate bready malt flavors; with a great malt/bitter/spiciness balance and zero cloying flavors after the finish. Moderate dryness from bitterness/yeast spiciness. Medium carbonation and light-medium body; with a very smooth and fairly sticky/grainy/bready balanced mouthfeel that is nice. Alcohol is very well hidden with minimal warming present after the finish. Overall this is a very nice spiced saison style. All around good complexity, robustness, and balance of fruity/earthy yeast, spices, and light-moderate bready malt flavors; and very smooth and easy to drink. A very enjoyable offering. --- Beer merged from original tick of Victory / Stone / Dogfish Head Saison du BUFF on 05 Jan 2013 at 22:14 - Score: Appearance - 8 | Aroma - 8 | Flavor - 8 | Texture - 8 | Overall - 7.5. Bottle hazy/cloudy dull light tan peach color. Brief white head settling into a thin ring. Musty light fruity spices. Mild fairly sweet pale malts. Some bitter bite at the end from the spice more so that straight IBUs. Not as dry as the classic imports.

Bottle, pours a bright golden color, topped with a small white head and wispy lacing. Nose is aromatic with spices, most notably the lemon thyme. Some rosemary, but I lose track beyond the two. Taste is light and refreshing, the spices seem dialed down from the Stone bottling. Some sweet and citrus, more rosemary and thyme. Overall quite pleasant.

Pour is a cloudy yellow with a large white head. Aroma Is very herbal aromatic. Like walking into a spice market. Lots of thyme, sage and rosemary. Flavor is more of the saison aspect with the herbs in the backround. Plenty of fruity yeasty esters with the herbs showing up after the swallow. Not your typical saison but I do like all the herbs added I only wish they stood out a bit more in the flavor.
