A hellaciously herbaceous collaboration of flavor. Collaborators: Sam Calagione, President & Founder, Dogfish Head Craft Brewery / Bill Covaleski, President & Co-founder, Victory Brewing Co. / Greg Koch, CEO & Co-founder, Stone Brewing

This saison has been infused with a herbaceous blend of Stone Farms and locally harvested sage, lemon thyme, rosemary and parsley and dry-hopped with Citra hops for a refreshing finish. First brewed in 2010, this citrusy farmhouse ale was named Saison du BUFF in tribute to the ad hoc coalition that Sam (Dogfish Head), Bill (Victory) and Greg (Stone) formed in 2003. Called Brewers United for Freedom of Flavor (BUFF), it was their way to show the beer industry that they were banding together to make room on the shelf for craft beer. Six years later this farm-to-kettle beer still boasts the use of freshly picked local herbs as well as Citra and Centennial hops to infuse crisp, savory, mouthwatering flavors.

Heavy haze on this gold beer, big suddy white head. Pleasant nose of hops and citrussy herbs. Light palate, a little dry. Lemon and orange citrus, pretty mild. Perfectly complemented by sweet herbs. Finishes light and dry. Creamy malt and more beautifully integrated citrus hop and herbs. Unusual beer, nicely joined up and delicious.

12 oz bottle. Pours golden with fine particles, white head. Herbal sage and thyme aroma, pine. Flavor leads with the sage and thyme, but quickly makes a left turn from the other two versions as it hurries into a strongly piney rosemary and oregano area. Evens out as I go on, but this seems like a nice version of the beer.

Pale and slightly hazy. Aroma is full of rosemary and other spices. Rosemary forward with a light pale malt character. The other spices (sage mostly) come through a bit. Decent, but inferior to the similar widmer spiced ipa.

Bottle. Golden body with a fizzy, white head, rapidly diminishing. Strong perfume and spice aroma — lavender, leafy hops, perfume, potpouri, lemon, flowers. The flavor is moderately sweet and lightly bitter. It finishes lightly sweet and moderately bitter. Medium body, watery texture, lively carbonation. The taste reminds me of the overpowering aroma of a dried flower shop. Strong floral notes, artificial spices. A bitter plant taste in the finish. Nothing nuanced or delicate about this beer. Pretty much a big mess. Yuck.

Picked this up at Bert’s Better Beers for $3.95 for a single bottle. Stuck it in the fridge for 2 days and poured into a Mikasa Tulip glass.

A - Poured a 4-Finger creamy white head with hints of gold. The beer is a beautiful hazy gold at around a 2.1 on the SRM scale. Gorgeous beer! Head lacing is pretty serious leaving creamy bubbles on the glass as the head subsides.

S - Huge spice on the nose! Lots of rosemary, cloves and basil! I LOVE basil so this beer smells wonderful. Very well done wild ale / farmhouse funkiness scent. Yeah, the scent reminds me a lot of Hill Farmstead’s Arthur. Wild and Spicy. Very pleasant. Let’s hope the taste lives up to the scent.

T - It tastes like I’m drinking a garden. Last year, I grew Rosemary, Sage, Basil and Thyme in my garden. This tastes like all of those were crushed up and thrown in a beer which is what the label suggests. It’s very interesting. The wild funk of a farmhouse saison is there but completely dominated by the spices that were added. I wished it wasn’t so garden-like but it is. The sage is the clear loser in this beer. It’s just too in your face and takes away from the rest of the beer.

M - Big 80% carbonation explosion on the mouth swish. Light-bodied and lingering spices for about 20 seconds after swallowing before subsiding just as a Saison should be.

O - I like the approach but I don’t like the final product. I LOVE Saisons and this is a great attempt. More wild and less spices and this could be a great beer.

Draught @ Moeder Lambic during the Stone vs Moeder Lambic event. I believed we shared the last bit of this keg. Yellow to almost greenish colour with a big white head. Smells spicy, ginger and sambal. Tastes spicy but fresh. Dry and bitter. Medium body.

Draught at Chez Moeder Lambic Fontainas during the three day Stone Event, 16-18 september 2011. Clear yellow / golden color, white head. Smell spices and bitter. Taste bitter, spices and grassy, but mainly spices. Don’t like it in a beer personally. Average carbonation, average body.

Sweet, spicy, minty, herbal taste. Some alcohol notes. Moussy mouthfeel, medium low bitterness. When warmed up gives more floral, herbal, citrus smell.

Draught Huge fine & dense, yellowish head over orange-metallic beer. Spicy - flowery (I get chamomille, or a bit of aniseed, rather than the Scarborough herbs), but nothing exaggerated, and hints @ dry hop. BBQ fish herbs. More spicy overtones in the mouth, maybe a touch too much - very American. Some grains, less hops than the nose suggests. Again dry herbs - fennel sticks? Light body, but creamy & slick. Interesting, but not quite my idea of "saison".
