Wild ale aged on black currants and pinot noir grapes

We teamed up with our friends at The Veil Brewing Co. to brew our first Wild Ale together. Primary open fermentation in our coolship with a classic saison strain and a long secondary fermentation in stainless with both brettanomyces claussenii and our native New England mixed culture.

Stroka pours an enticing deep cherry hue with a foamy violet head. Vibrant aromas of wildflowers meet the nose alongside a bold note of strawberry with a hints of raw honey and earthy funk. A berry forward palate calls to mind flavors of freshly picked dark cherries and raspberries, with subtle cranberry leading into a delicate, vinous red wine grape profile. Lightly floral with the suggestion of hibiscus and rose hip, Stroka has a gentle level of acidity with a light body and clean finish.

11.2 oz. bottle, pours a hazy dark red with a small white head. Aroma is full of thorny black currants, some red grape skins, wild yeast, and rustic notes. Flavour wonderfully marries the currants with the red grape skins, with a wonderful wild yeast and rustic character. Damn, the currants and grapes really work harmoniously, and the yeast expression is excellent. Fantastic.

On tap at Finnโ€™s Manor. Pours a dark purple with small pink head. The aroma is berry, cherry, grape skin, oak. Slick body, jammy, berry, cherry skin, currant, oak, nice tartness, enjoyed this.

Cyclamen head, fast gone over deep purple beer. Fruit, blackcurrant obvious, cassis a mile out. Blackcurrant, Hero cassis, fruitacids closing off; finish is very tart. Sharp acidburn, dry-out effect, not very well-bodied. Typical American fruitbeer, great in its fruitiness, and wร ร ร ร y too sharp. Thanks to M&L!

From bottle at home. Clear dark ruby red color with pink head. Malty and yeasty aroma, tart fruity, berries, veggie notes, spicy herbal, light funky, wood, vinous. Light sweet and moderate acidic taste. Light to medium oily body with soft carbonation.

Sample during the "New England Beer & Food Tasting" on 07/14/2018. Bright pinkish-ruby color with a medium pinkish-white head that dissipates steadily to an outer ring. Short strings of lacing. Aroma of funky yeast, berry and malt. Medium body with flavors of brett yeast, tart berry and cherry, vinous oak and bready malt. The finish is tart and oaky with a berry aftertaste. Good beer all around.

Ha, "Trillium makes some of the worst sour beers in America" is some ignorant BS. They're certainly not top tier sours (though the soaks were mostly excellent), but they're not even close to the bottom. This one wasn't even that acidic...
Pours a lightly chill-hazed, deep blood red-to-magenta-and-violet. Dark beige, pink-tinted head atop shows moderate retention.
Very fruity, rich, luxurious nose with a complex mix of various malic acid-heavy fruits; strawberry, cherry, raspberry. Pit, seed, pepper and leather are all here, as well as light tannin and meaty pulp-like notes. Vanilla and earth enter the mix with light honey-like base malt sitting gently underneath. There's a touch of acetic acid and moderate lactic acid keeping things quite intense, but it doesn't feel overly acidic, nor is it boozy. The malt, spelt and wheat definitely does a good job of balancing/soaking up the acidity. Fruit is nicely attenuated and integrated.
In the mouth it's rich, soft, malty and well-attenuated with notes of hibiscus, tart cherry, light raspberry and cranberry skin leading to cereal-like spelt and biscuity wheat. Tight carbonation with a bit more malt sweetness and suppleness than usual, and it works wonders, balancing the acidity and producing juicy, fruit notes and a very comfortable texture. Light-to-moderate lactic acid is well-integrated and the malts and adjunct grains go a long way towards giving the beer more complexity than just a mouthful of fruit and acid. Excellent beer. No alcohol or flaw noted.
