Wild ale aged on black currants and pinot noir grapes
We teamed up with our friends at The Veil Brewing Co. to brew our first Wild Ale together. Primary open fermentation in our coolship with a classic saison strain and a long secondary fermentation in stainless with both brettanomyces claussenii and our native New England mixed culture.
Stroka pours an enticing deep cherry hue with a foamy violet head. Vibrant aromas of wildflowers meet the nose alongside a bold note of strawberry with a hints of raw honey and earthy funk. A berry forward palate calls to mind flavors of freshly picked dark cherries and raspberries, with subtle cranberry leading into a delicate, vinous red wine grape profile. Lightly floral with the suggestion of hibiscus and rose hip, Stroka has a gentle level of acidity with a light body and clean finish.

375 ml bottle. Nice deep purple / ruby color. Aroma and flavor are the same. It shows cranberry, raspberry, red grape situation works well. Only mildly tart or funk. Light Pinot Noir. Nice balance on the palate. Real nice surprise here!

Bottle at home for Sox Angels late innings bought from Trillium Canton location. Ludicrous deep purple pour reminds me of a Grimm brew I had awhile ago. Nose is rich berry and wine residue. Tastes of blackberry, cranberry, tannic wine, strawberry, grassy. Tart. Quite nice.

Pours deep ruby into a tulip. Pink head with little retention recedes to pool surface. Blackberry aromas. Sharp with dry crushed berries and fruit skin upfront turning sweet before the dry fruity oak finish.
