Raspberry Bière du Pays is our restrained approach to a fruited Saison. We added a thoughtful amount of Black and Red Raspberries to our Bière du Pays to not cloud the nuances of our lovely little beer, but to add a layer of soft fruit and color for a new experience. Our Missouri yeast and bacteria provide the layers of complexity to this farmhouse ale that was aged on oak for several months before being naturally conditioned in this bottle.

On tap at The Side Project Cellar. Pours a cloudy ruby with medium off white head leaving spotty lacing. The aroma is strong raspberry, oak, floral, yeast. Medium body, tart berry, lemon zest, light oak, light acidity, enjoyed this.

Draft at brewery. Lacing sticks around. Pretty orange pink color. Aroma has some mild, natural berry aroma. You get the earthy pits from berries. Acidity follows. Flavor loses almost all the wonderful berry and is just that one note acidic beer that is seemingly the new normal for Side Project. Some berry in the aftertaste, a little jammy.
