All three breweries involved in the collaboration ferment their beer with unique blends of yeast and bacteria. In the case of Jester King, all of our beer is fermented with a mixed culture of microorganisms consisting of brewers yeast and native yeast and bacteria harvested from the air and wildflowers around our brewery in the Texas Hill Country. We brewed our version of Cerveza Sin Frontera at our brewery in October 2013 with the help of Chad Yakobson of Crooked Stave and Raphaël Mettler of Trois Dames. The wort, brewed with Hill Country well water, barley, wheat, oats, and hops, was initially fermented in stainless steel for three months, then refermented in Spanish sherry barrels for twelve months, and finally refermented in bottles, kegs, and casks for three more months.

Blend #1 was sherry barrel aged and bottled on 12.16.2014.

Tap at CS - light hazy light amber - interesting one, this - there is a sweetness and toastiness to the malt character that is interesting contrastedagainst the moderate tartness and moderate acetic acid of the brew - a bit of cherry - the toastiness of the malt eventually settles to a kind of husky character - finish has a bit too much acetic.acid - meh.

[4/30/15] Draught at Mikropolis in Copenhagen. Orange. Lovely aroma of wine, funk, cobwebs, caramel and fruits. Sour and slightly sweetish flavor, funky and fruity, with some wine. Medium-bodied. Draught@Mikropolis, Copenhagen. Hazy amber colour with not too much head. Aroma is mildly floral along with some lactic, eggy and sour wooden notes. Flavour is similar with some slight eggy notes. At first I thought it was the Trois Dames version being spoilt, but this one had some similar eggy and plasticky notes, so apparently it’s something intended. Bottle @ my parent’s basement, picked up at Crooked Stave. Pours a murky orangish brown appearance with a thin tan head. The aroma has a lot of spice (cinnamon, nutmeg, pepper), vinegar / acetic acid, some funk, a little bubblegum / candy, wood, and some tannins. Medium body. Moderate low sweetness and bitterness. More twangy, candy notes in the mouth. Quite a bit of leather, oak, vanilla, and tannins. Moderately tart. Somewhat funky. There’s some fruit notes like grape, plum, and prunes. Overall, it’s pretty enjoyable. I can’t remember what I paid for it, maybe $18-20. It’s fun but not worth a repeat purchase at that price.

King’s Arms Tap Takeover. Keg. Hazy amber beer, no real head. Palate is light and minerally crisp. Modestly sour start with decent lemon and orange but then lemon acid kicks in. Sherry? Maybe a trace. Tart dry finish. Clean.

Pours slightly hazy amber with a off-white head. Aroma has notes of malt, caramel, dried fruits, funk and wood. Taste is medium sweet and medium sour with a long slightly dry, sour, fruity and woody finish. Keg during the tap takeover at the Kings Arms - London. Pours clear gold with a creamy, white head. The nose holds some dry, pale wood, and dried up citrus fruits. Light sweet flavor with more woody dryness, moderate acidity, jammy citrus. Medium bodied with fine to average carbonation. Finishes with some cleansing acetic bite, more citrus, wood. OK overall.

Keg at the kings arms tap takeover . hazed onion skin, brown coloured pour with a fleeting off white head. Aroma is spicy, semi sweet, malt vinegar, tart apple, funk, musty. Flavour is musty dusty tart apple, funk, malty, musty funk. Palate is ctisp, light acid, light acid, jighish carbonation. Woody, plastic lingers. Bit too much acetic acid.
